Summer Citrus-Ginger Dressing

Summer citrus-ginger dressing

This dressing is so fresh & versatile. I like to toss a jar full of it in a big bowl of chopped, cruciferous vegetables, or use it to marinate chicken or fish. You can substitute any type of citrus you have on hand, but this blend is pretty great, and stuff you probably have in the fridge already.

In a small jar, whisk together:

  • 4 T good olive oil. (Unless you plan to use this on grilled meat or fish, if so, use avocado oil)

  • Juice of 1 lemon, 1 lime, and 1/2 an orange

  • 2 T fresh ginger, grated or chopped fine

  • 1 T dijon mustard

  • 1 T local honey

  • 1/2 tsp salt

Makes about 6 oz of citrusy goodness.
