International Supper Club: Sopa Paraguaya


Sopa Paraguaya

INGREDIENTS

500g (about 1 lb) shredded cheese (mozzarella or muenster)

1 large white onion, sliced thinly

1 T salted butter, plus 6 oz butter

8 eggs, separated

1 can yellow corn

1 can creamed corn

2 cans white cornmeal (use the corn can to measure)

1 (15 oz) can whole milk (use the corn can to measure)

1 (15 oz) can buttermilk (use the corn can to measure)

1 T coarse sea salt



STEPS

Preheat oven to ??? degrees

Melt 1 T salted butter in a skillet, and saute onions until translucent.

In a stand mixer bowl, add cheese, egg yolks, corn, corn meal, milks, salt, and 6 oz melted butter. Mix on low.

While ingredients mix, beat the egg whites until peaks form.

Add egg whites to stand mixer bowl, and continue to mix

Once blended smooth, pour filling into a greased 16x9 casserole dish

Bake for 40 minutes, cool and enjoy!
