Taco Tuesday Bake

Enjoy this easy, fresh dish perfect for taco Tuesdays.

PREHEAT OVEN TO 350. Get a 9x13 dish ready to go.

Ingredients:

  • 2 cans navy beans, drained & rinsed (you could use pinto or black, but the creaminess of navy beans is so good here)

  • 1 lb ground turkey

  • 3 tablespoons taco seasoning

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1/2 cup full-fat Greek yogurt

  • 1/4 cup stock or broth (Try to match the broth to your protein. Use turkey, chicken, beef, or veggie.)

  • Juice from 1 lime

  • Hot sauce (I love Cholula. Use as little or as much as you like when directed.)

  • Shredded iceberg lettuce

  • 1 cup shredded Mexican blend cheese (or just a good handful, no need to measure)

  • 2 tomatoes, chopped

  • 2 green bell peppers, chopped

  • 1 small can sliced black olives

  • Pickled or fresh sliced jalapeƱos

  1. Brown your meat. Drain fat if needed. Add taco seasoning, salt & pepper, and stir to coat.

  2. Whisk together Greek yogurt, broth, lime juice, & hot sauce.

  3. Start layering! Mix to combine in the 9x13 dish:

    • Beans

    • Turkey

    • Yogurt sauce

    • Tomatoes & bell peppers

      THEN layer on top:

    • Cheese

    • Olives & jalapeƱos

  4. Bake for 30 minutes, or until cheese is melted & bubbling.

  5. Top with shredded lettuce & more hot sauce if needed. (The more lettuce, the better! The cold, freshness goes well with the warm taco-ness.)
