GF/DF Banana Bread
Makes two loaves.
5 medium ripe bananas
1 teaspooon pure vanilla extract
2 eggs
5 tablespoons avocado or coconut oil, melted
1/2 cup organic cane sugar
1/2 cup coconut sugar
4 tablespoons maple syrup or honey
1 tablespoon baking powder
1.5 teaspoons sea salt
1 teaspoons ground cinnamon
1.25 cups unsweetened almond milk
1.5 cups almond meal
2.5 cups gluten-free flour
2 cups gluten-free oats
Optional: Chopped nuts
Dump everything into the bowl of a stand mixer and mix until everything is incorporated.
In two bread pans, line with parchment paper and pour your mix in evenly.
Bake at 350 for an hour. Check the insides with a toothpick (or a chopstick) and see if it comes out clean. If not, give ‘er another half hour or so. You want to the top to be crunchy and brown.
Top with melted butter, ghee, honey or nut butter.
